I didn’t want to overcrowd the sheet pan (which can result in steaming, as opposed to crisping, the ingredients) so I used a separate pan to roast the broccoli. I don’t know about you but I often wonder who is eating these serving sizes!!! I doubled the tofu AND the marinade, and used 2 heads of broccoli. If it looks like I used 2 sheet pans here it’s because I was skeptical of the serving size called for in the original recipe. I scaled this recipe up and it worked out great! You can swap the maple syrup for honey or agave, and the vegetable oil for grapeseed or sunflower. The original recipe called for baby bok choy, which I don’t care for, but almost any vegetables will work here (or even a combination this would be a great use of any leftovers you have lying around). The noodles get crisped up in the oven, then topped with the broccoli and tofu. When it comes time to prepare the meal, simply soak the ramen in boiled water to soften, and spread it on a baking sheet along with the sauce. I do all of this early in the day, in addition to chopping up the broccoli and preparing the sauce for the ramen. As always, you want to thoroughly weight and drain your tofu (I swear by my TofuBud), and then slice it up and place it in your marinade. This dish gets 5 stars for easy, minimal prep. Pour in coconut milk, scraping up any curry paste with a wooden spoon. Add mushrooms and saut until golden brown and tender, about 5 minutes. Add ginger, shallots, garlic, chile and cilantro stems, and saut until tender, about 5 minutes.
